LUCA LACALAMITA
The Aroma Alchemist.
Luca Lacalamita has graduated at the Institute of Hospitality in Molfetta in 2004 and he started working at the Osteria dell'Arancio in London. Then after a period working at the Dorchester, Gordon Ramsey's restaurant Petrus as assistant to the pastry chef, in 2006 he worked at Cracco-Peck in Milan and at El Bulli by Ferran Adrià in Spain. In 2007 he worked at the Osteria Francescana with Massimo Bottura and from 2006 to 2011 at Akelarre in San Sebastian.
Today Luca Lacalamita is the pastry chef at the Enoteca Pinchiorri in Florence, where every day he can practice innovative techniques such as reverse osmosis for vacuum and non-conventional preparation such as citrus bouquet of geranium scented with the aroma of sour strawberry. His dream is to write a book of creative pastry and this goal does not seem to be so far away.
